Analysis of the chemical composition of cassava flour by the Raman Method, microbiological characteristics and their effects on human health

Abstract

Introduction: Raman spectroscopy has emerged as an efficient technique for analyzing the chemical composition of foods and detecting potential fraud. Objective: The chemical and microbiological composition of artisanal and industrialized cassava flour was analyzed and compared to identify possible differences associated with the type of processing. Methods: Raman spectroscopy was used, with analysis of spectra between 300 cm⁻¹ and 3000 cm⁻¹, in addition to microbiological tests for the detection of pathogenic microorganisms. The tests and values determined by the competent agencies were used for microbiological analysis. Results: The chemical characterization of the cassava flour samples revealed significant differences between artisanal and industrialized products. In the microbiological analysis, the presence of microorganisms was found in 100% of the samples, with emphasis on total coliforms, mesophilic bacteria, filamentous fungi and species of the genera Aspergillus, Fusarium, Penicillium and Rhizopus. Conclusion: it was found that there are significant differences between artisanal and industrialized flours, both in chemical and microbiological composition, influenced by the production and storage stages. The combination of Raman spectroscopy and microbiological analysis is effective for detailed characterization of the samples, being a relevant tool for quality control and food safety, in addition to alerting to the possible risks to human health associated with the consumption of contaminated products.
